专利摘要:
An apparatus for effecting two-sided cooking of food products, such as frozen hamburger patties, is disclosed which has been configured for highly desirable efficiency, versatility, and consistency in food product preparation. The apparatus includes a housing upon which is mounted a substantially horizontal lower platen assembly, with the apparatus further including one or more upper platen assemblies each mounted on a respective pivotal support arm for movement between a lowered inactive position and a raised active position with respect to the lower platen assembly. The apparatus includes a mounting arrangement for permitting limited relative movement of each upper platen assembly with respect to its support arm, and further includes mechanisms for maintaining a predetermined minimum spacing between the upper and lower platens for avoiding undue compaction of the food products. Automatic controls effect upward movement of the upper platen for precise cooking control.

The invention relates to kitchen equipment, namely, devices for two-side frying of food products,
The purpose of the invention is to improve the quality of the product being fried.
Fig, 1 shows a device, front view; figure 2 is the same, side view; Fig. 3 shows a lower roasting plate; figure 4 - section aa on fng "3 {figure 5 - device, view in axonometry; FIG. 6 is a top fryer, side view; PA Fig.7 - section BB in Fig, 5; FIG. 8 shows the device at the time of the preparation of a pre-frozen meat product in
A device for two-sided frying of food products includes a housing 1z on which a lower 20 n frying plate 2 is fixed with the formation of a lower horizontal surface, a lever 3. and also an upper frypipe 4 connected to the lever 3. The device also contains 25 devices 5 to form a minimum the gap between the upper 4 and lower 2 plates with the mechanism for adjusting the gap located in the upper plate 4, including thrust elements 3 for interacting with the lower plate 2, while the upper plate 4 is connected to the lever agom 3 using a floating suspension that includes eyelets for 7 h. bolts 8 for mounting the top-fry 3 surface parallel to the bottom. In the plates are placed heating elements. The lower frypot 2 may include a steel plate 9 which forms the lower frying surface of the device. The surface of this plate is well processed. Under the plate 9 there is an electric heating element 11 enclosed in an aluminum casing 10. There can be from one to six such knots of electric heaters. These nodes can also be on the top plate, with each node having its own connection, which allows using only $ of the device. To fasten each heater assembly to the lower surface of the shell 10, threaded studs 12 are attached. The heater has 13 holes for passage of the studs, and the diameter of the holes 13 must be greater than the diameter of the studs 12, taking into account the thermal expansion of the material from which the studs 12. TL
to achieve good thermal efficiency, each heater assembly is pressed against the plate 9. For this purpose, each stud, together with nuts 14 screwed on these studs, provides spring washers 15 (i.e., cup-shaped springs). Good thermal efficiency is also achieved due to thermally conductive paste 16 placed between plate 9 and each heater unit, and the paste also acts as a lubricant, providing adaptability to different thermal expansion of the heaters and plate 9. The temperature is controlled by a thermocouple for each heater unit „In addition, the device contains a counterweight 18 connected to the lever 3 by means of an axis 17 for fixing the upper plate 4 in the upper position, since the counterweight 18 acts to raise These levers 3 and the plate 4, an automatic locking device is provided for locking the lever and the plate in their lowered position with the possibility of unlocking. For this purpose, a locking mechanism 19 is provided, which interacts with the locking stop
20 on the swivel lever 3, and when moving the lever 3 using the handle
21c down position the locking mechanism works automatically,
An automatic control device 22 including timers is connected with the locking mechanism. At the end of the pre-set cooking cycle, the locking mechanism 19 automatically opens, after which the counterweight 18 automatically raises the upper plate 4 to its upper position. Since this construction makes it possible to dispense with an operator in order to manually raise the upper oven plate at the end of two-sided frying, the same quality is achieved. In Figs. 5 and 6, it can be seen that the top plate 4 includes an outer lid 23, which substantially covers the top frying surface forming the top frying surface of the device proposed. Thermal insulation 24 is installed inside the cover 23 above the top plate to reduce heat loss from the plate. The top grill contains a cast aluminum construction including a cast heating element.
Unlike the design of the bottom cooker 2, the top cooktop contains only a single zone, which includes its own control device, operating independently of the bottom cooker. The mechanism for adjusting the gap comprises a vertically oriented rod 25, which passes through the top plate and is mounted with the possibility of vertical movement relative to this plate ,. The vertical rod 25 has a stop element 6, which engages with the bottom plate 2.
The vertical rod 25 can be rotated around its axis, with each mechanism 5 also including a sector protrusion 26 attached to the rod 25 and rotated with it. On the rod 25 between the sector protrusion 26 and the plate is placed a coil spring 27 of compression, pushing the rod upwards.
The clearance adjustment mechanism 5 also includes a stopper plate 28 held at a distance above the top plate by bolts 29 and spacer sleeves 30. On the support plate 28 circumferentially around the axis of rotation of the rod 25, a plurality of stop bolts 31 mounted on the thread are spaced apart. The handle 32 is mounted on the rod 25, allows the shaft to be manually moved axially, opposing the spring, and also turn it seperatively by turning the rod 25 (FIG. 7, the sector protrusion 26 is selectively set so that it goes into engagement with one from the locking bolts 31, the spring 27 pushing the sector protrusion into engagement with one of the locking bolts. By engaging, the distance to which the supporting portion protrudes beneath the lower surface of the upper plate can be selectively and very easily changed. Thus, each of the four The mechanisms 5 for adjusting the gap of the upper plate 4 are adjusted so that the corresponding locking bolt 31 engages with the corresponding sector protrusion 26. Thus, the four stop elements 6 protrude under the cooking plate to the corresponding Suitable equal magnitude, whereby between the top and bottom of griddle plates is maintained requested mini

maximum clearance, with the upper plate 4 being set exactly parallel to the lower plate 2,
; A sheet 3 of low-friction material is placed on the frying top surface of the top plate, eliminating sticking of fried foods in the top plate. Sheet 33 is made of low friction material, such as polytetrafluoroethylene. The bulk fastening of low friction sheet 33 is provided, as this sheet material usually has a short service life, the removable fastener provides a convenient replacement as well as convenient cleaning of the top plate assembly. The fastener contains a pair of mating mounting devices. runners and & Imola 34S respectively disposed on perets- therein and rear edges of the upper plate 40 mounting These runners have a cross-sectional shape of a dovetail. Spring clips are attached to them, having the appropriate configuration, allowing the h to set the edges of the low friction sheet 33 between the single installation runner and its corresponding clip.
The device works as follows.
The product being fried is placed on the bottom plate and the heating and the automatic control device 22 of the locking mechanism are turned on. When two-sided roasting begins, the top plate floats down relative to the lever 3, the latter being held by a locking mechanism 19 fixed relative to the body 1 of the device. As the frozen meat product thaws out, it is compressed by the weight of the upper plate 4, the thrust elements 6 of the adjustment mechanisms 5 move towards the lower plate 2 and then come into engagement. Thus, while the frying process is going on, the engagement resistant elements with the bottom plate 2 maintains the required minimum gap and parallelism between the top and bottom frying plates, eliminating undesirable smth of product 55 until it is roasted
